Incorporating vegetables to your meals is essential for a balanced and healthy diet. Vegetables are nutrient dense, good source of fiber, and most are anti-inflammatory and full of anti-oxidants. All things that are needed for a healthy lifestyle. . . . But what if you hate vegetables? How can you incorporate them into your meals? . . . Mix Them In: If you have a dish you love and can find a way to add a vegetable without it overtaking the flavor, add it! . Here are some of my favorites: 1. Add Mushrooms, Bell Peppers, and/or a small amount of Onion to spaghetti sauce. 2. Add Bell Pepper, Carrots, and/or Zucchini to your favorite Chili recipe 3. Add Broccoli, Carrots, and Onion to any Asian dish 4. Add Broccoli, Asparagus, and/or Mushrooms to your Scramble in the morning 5. Add Spinach, Arugula, and/or Tomato slices to your Grilled Cheese . . . There’s so much more you can do with foods and flavors once you start adding vegetables into the meals. Test it out and try different things. You know what I'm talking about... And it’s been a Monday! I had a rude awakening that I somewhat expected when I got on the scale this morning. Haven’t looked at that thing for a few months because of schedule/stress I knew there was only so much I could do. Found out that over a year I’ve gained 12 lbs.
